2 cups kidney beans
100gm cabbage
100gm chopped spinach
1 cup shredded carrots
0.75 cup roasted peanuts
1 sliced jalapeño
lemon juice
Dressing:
1 tbsp peanut butter
3 minced garlic cloves
1 tsp minced ginger
½ tsp chili flakes
2 tbsp water
Instructions :
How to make:
1. Cook quinoa and Set aside to cool.
2. Prepare the dressing by mixing all the ingredients in a small bowl.
3. Roast your peanuts in a skillet for a few minutes.
4. Chop up all the ingredients for the salad, and assemble.
